Paleo Week 1

Our first week on Paleo went pretty well!  My daughter loved her lunches in her lunch box.  She loved her egg muffins for breakfast (they were not Paleo, but I am working on converting them)  We had roasted chicken, carrot fries, green beans, stuffed squash, spaghetti squash.  Everyone enjoyed the brownies we made!  I am going to roast another chicken today, and I will use some of it for a chicken and vegetable soup.

We did have a couple things we weren't supposed to: beans, corn tortillas, chips, a little bit of cheese.  But, all in all, we did pretty well! 

Our new cookbook arrived, and now I am making our menu for this week.
